  1. For the sauce, place whole peppers on a baking sheet and roast in the oven at 180°C (350°F) until the skin starts to blacken. Then peel and dice the peppers.
  2. Peel the tomatoes and dice them finely. Do the same with the onion and garlic. Sauté the vegetables in heated olive oil, add salt and pepper, and simmer for about 5-7 minutes.
  3. Slice the zucchini, tomatoes, and eggplant and arrange them alternately in a baking dish with the prepared sauce.
  4. Drizzle the vegetables with a dressing made of cilantro, olive oil, and minced garlic. Cover the dish with foil and bake in a preheated oven at 180°C (350°F) for about an hour.
  5. Before serving, sprinkle the ratatouille with balsamic vinegar.
