Three Vibrant Lunch Recipes to Brighten Your Day

Roasted Pepper Soup

This roasted pepper soup is a dream come true! Especially when you add sage (also roasted) and a touch of couscous, you get an amazing, vibrant lunch!

Ingredients:

  • Red bell peppers – 4-5
  • Tomatoes – 2-3
  • Sage – a small bunch
  • Couscous
  • Pumpkin seeds
  • Salt, pepper
  • A bit of water

Instructions:

  1. Roast the peppers and tomatoes under the grill until the skin is blackened. Place the vegetables in a deep container and cover with cling film. Let them stand.
  2. Remove the skin from the vegetables, blend them, and add water or broth if desired.
  3. Prepare the couscous according to the package instructions.
  4. Bring the soup to a boil, add salt and pepper to taste.
  5. Toast the pumpkin seeds.
  6. Coat the sage leaves with soft butter and bake in the oven for 2-3 minutes at 180°C (350°F).
  7. Serve the soup with couscous, pumpkin seeds, and sage leaves. Drizzle with olive oil.

Potato Casserole with Mince

I’ve often shared my childhood memories, which are priceless as they provide endless inspiration! Today, I introduce you to another taste from my childhood…

Ingredients:

  • Potatoes – 5-7
  • Small onions – 2
  • Carrot – 1
  • Tomatoes in their own juice – 100g
  • Mince (I use pork/beef) – 600g
  • Salt, pepper, a couple of thyme sprigs

Instructions:

  1. Chop the onions and fry in vegetable oil. Add the grated carrot and fry together.
  2. Add the mince and tomatoes in their own juice, simmer for 10 minutes, season with salt and pepper, and add thyme if desired.
  3. Peel and boil the potatoes. Make mashed potatoes.
  4. Place the mince in a baking dish, spreading it evenly. Top with the mashed potatoes and smooth the surface. Brush the top with egg yolk.
  5. Bake for 20 minutes at 180°C (350°F).
  6. Serve the dish warm, optionally with a dollop of sour cream.

Classic New York Cheesecake

If you’ve been hesitant to make a cheesecake yourself, forget your fears! The classic New York cheesecake is within everyone’s reach. And the best part is, your family will ask you to make it again and again, I promise!

Ingredients:

For the crust:

  • Cookies (I use ‘Yubileynoe’) – 300g
  • Butter – 100g
  • A pinch of nutmeg

For the filling:

  • Cream cheese – 600g
  • Sugar – 150g
  • Heavy cream (33-35%) – 200ml
  • Eggs – 3
  • Lemon juice – 1 tsp
  • Vanilla

Instructions:

  1. Take all the filling ingredients out of the fridge in advance, about 1-1.5 hours before starting.
  2. In a blender bowl, combine the cookies and butter, blending into a uniform crumb.
  3. Mix the cream cheese, eggs, cream, and sugar with a whisk or silicone spatula.
  4. Add the lemon juice and vanilla, mix again.
  5. Press the cookie crumbs into the baking dish, forming the edges and compacting well.
  6. Pour the cheese mixture over the cookie crust and smooth with a spatula.
  7. Wrap the baking dish in foil, place it on a deep baking tray, add water, and bake for 2-2.5 hours at 110°C (230°F).
  8. Cool the cheesecake and let it stabilize for 12-24 hours. Decorate with berries before serving.
