Delicious and Healthy Fish Recipes for a Quick Family Dinner
I remember the first time I tried Banitsa. It was a sunny day in Bulgaria, we had just arrived from Sofia, and Mr.Chef brought me dinner. Banitsa and a glass of chilled wine. Every time I recall that name, I see the sea view from the balcony and taste the cheesy bread. I never thought I would be making it at home for my family!

Baked Sea Bream with Herbs
Fish is not only very healthy but also delicious and quick to prepare! Save this recipe for a family dinner.
Ingredients:
- Sea bream – 2
- Any herbs (I used thyme and rosemary)
- Garlic – 2-3 cloves
- Medium tomatoes – 2
- A bunch of dill
- Butter – 30 g
Instructions:
- Clean the fish carefully, as the fins have very sharp spines.
- Season the fish with salt and pepper.
- Stuff the fish with herbs and bake for 15-20 minutes at 180°C (350°F).
- Make the sauce: finely chop the garlic. Melt the butter in a saucepan, add the garlic, and sauté lightly. Then, add the finely chopped tomato and a bunch of dill.
- Cook for 2 minutes, stirring constantly.
- Serve the fish with the sauce.
Banitsa
Ingredients:
- Phyllo dough – 1 package
- Brynza cheese – 200 g
- Eggs – 2.5
- Milk – 200 ml
- Butter – 50-60 g
Instructions:
- Defrost the phyllo dough package.
- Mash the Brynza cheese and mix it with two eggs.
- Melt the butter and prepare a silicone brush.
- Start forming the Banitsa: brush a phyllo dough sheet with melted butter, fold it in half, and place it in a baking dish. Then, add the filling and the next dough sheet. Repeat the layers.
- Continue until you run out of dough and filling, remembering to brush each dough layer with butter.
- Mix the milk with 0.5 egg (I used only the egg white). Pour the milk and egg mixture over the layered pie.
- Bake at 200°C (400°F) for about 30 minutes.
Solianka
It’s so hearty that it’s hardly a soup! I’m sharing a recipe for meat Solianka, or as it’s called in the “Recipe Collection,” a meat assortment!
Ingredients:
- Meat broth – 2 l
- Medium onions – 2
- Pickled cucumbers – 2
- At least five types of meat products, for example: hunting sausages, boiled ham, bacon, balyk, smoked neck, ham, boiled meat from the broth
- Bay leaf
- Tomato paste – 2 tbsp
- Black peppercorns
- Salt
For serving:
- Lemon slices
- Olives
- Sour cream
- Parsley
Instructions:
- Peel and sauté the onions in a small amount of oil. Add them to the broth.
- Peel the pickled cucumbers and cut them into small squares. Sauté for 2-3 minutes, then add the tomato paste, cover, and simmer for another 5-8 minutes.
- Cut the meat arbitrarily (different types of meat can be cut differently).
- Add the cucumbers, meat, and spices to the boiling broth. Salt to taste and cook for another 5-10 minutes on medium heat.
- Serve with a lemon slice, olives, herbs, and sour cream.
