Dessert “Nighttime” (3-4 servings)
Halloween recipes don’t have to be drastically different from everyday recipes. The key is in the presentation.
Ingredients:
- 150g dark chocolate
- 1 egg
- 300ml cream
- 8 chocolate cookies (like Oreo) for crumbs and decoration
- Powdered sugar
- Gummy candies for decoration (look for “spooky” candies in stores)
Instructions:
- Melt the chocolate in a double boiler. Once melted, set it aside for a couple of minutes.
- In the same double boiler, whisk the egg until frothy. Mix in the melted chocolate and let it cool.
- Whip the cream and add it to the chocolate-egg mixture. Pour into glasses and refrigerate.
- Crush the chocolate cookies and sprinkle the crumbs on top of the chocolate mousse. Insert a whole cookie and decorate with gummy candies.
“Spooky Apple” Cupcakes
Ingredients:
- 5 apples
- Ready-made shortcrust pastry
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1/2 tsp ground nutmeg
- 15g butter
Instructions:
- Preheat the oven to 180°C (350°F). Peel and dice the apples, then cook them with a half cup of water and spices for 20 minutes.
- Grease muffin tins with butter and line them with pastry, leaving some to cover the tops.
- Fill the tins with the apple mixture, then cut out faces in the remaining pastry pieces. Place these on top of the apples and seal the edges with water.
- Bake for 25 minutes. Serve warm with a scoop of vanilla ice cream.
“Ghostly Thing” Pie (8 servings)
Ingredients:
- 4-5 cups blueberries (fresh or frozen)
- 1/2 cup sugar
- 3 tbsp cornstarch
- 1 tbsp lemon juice
- Pinch of salt
- 2 tbsp butter, cubed (optional)
Instructions:
- Preheat the oven. Divide the pastry in half, with one piece slightly larger than the other. Roll out the larger piece into a 30cm circle and place it in a pie dish.
- Mix sugar and cornstarch, then add blueberries and lemon juice. Pour this mixture into the pie dish and dot with butter.
- Roll out the remaining pastry and cut out holes for eyes and a nose. Cut a mouth shape with a knife. Place this on top of the pie, seal the edges, and bake for about an hour or until golden brown.
“In the Web” Soup
Ingredients:
- Zucchini or pumpkin
- 1 tbsp olive oil
- 2 minced garlic cloves
- 1/2 onion, diced
- 900ml chicken or vegetable broth
- 1/2 cup heavy cream
- 2 tsp salt
- 1/2 cup toasted walnuts
- 1/2 cup sour cream
Instructions:
- Sauté garlic and onion in olive oil until the onion is translucent.
- Add diced pumpkin, broth, and cream. Bring to a boil, then reduce heat and simmer until the pumpkin is soft.
- Blend the soup with walnuts and salt until smooth. Pour into bowls and decorate with sour cream to create a “web” effect. Top with a walnut half.
“Witch’s Soup” with Bread Bones (4 servings)
Ingredients:
- 2.5kg pumpkin flesh (about 2 medium pumpkins)
- 1 chicken bouillon cube
- Some milk
- 250g flour
- Water
- 2 tbsp olive oil
- 1 tsp fine salt
- 1 packet active dry yeast
Instructions:
- For the bread bones, mix flour, yeast, oil, water, and salt to form an elastic dough. Let it rise for 2-3 hours. Shape the dough into bone-like sticks and bake at 180°C (350°F) for 15 minutes.
- For the soup, cook diced pumpkin with water and bouillon until soft. Blend until smooth, adding a bit of milk. Serve with the bread bones.
