1. Salmon and Broccoli Pie
Ingredients:
- 300g fresh salmon
- 100g cheese
- 200g broccoli
- 1 pack of frozen puff pastry
- Salt and freshly ground pepper
Instructions:
Thaw the puff pastry and broccoli. Cut the broccoli into florets, discarding the tough stems. Remove the skin from the salmon by placing it skin-side down and sliding a sharp knife between the skin and the flesh. Roll out the pastry slightly, layer with cheese slices, and top with salmon. Sprinkle with chopped broccoli, salt, and pepper. Fold the pastry over the filling, seal the edges, and brush with beaten egg. Bake at 350°F (170°C) for 50-60 minutes. Let it cool before slicing.
2. Simple Cheesy Tomato Pie
Ingredients:
- 1 pack of puff pastry
- 250g mozzarella
- 100g feta cheese
- Tomatoes (preferably of different colors)
- Salt and pepper
- Basil for garnish
Instructions:
Thaw the pastry and place it in a pie dish. Grate the mozzarella and crumble the feta cheese. Layer the cheeses on the pastry and top with sliced tomatoes. Season with salt and pepper. Bake at 350°F (180°C) for 30 minutes. Garnish with fresh basil leaves and a drizzle of balsamic glaze if desired.
3. Stuffed Peppers with a Twist
Ingredients:
- 4 medium bell peppers
- 300g ground meat (70% beef, 30% pork)
- 1 onion
- Fresh herbs
- Cheese (Gouda and Suluguni)

- Sour cream for serving
Instructions:
Chop the onion and sauté in a little oil. Add the ground meat, salt, and pepper, cooking until browned. Stir in the fresh herbs. Cut the bell peppers in half and remove the seeds. - Ciabatta bread
- 2 large mushrooms
- 3 slices of bacon
- A few sprigs of thyme
- Mozzarella cheese
- Salt and pepper
Instructions:
Slice the ciabatta and toast it lightly with olive oil. Chop the bacon and fry until crispy. Add the mushrooms and thyme, cooking until the mushrooms are tender. Top with mozzarella slices and let them melt. Spoon the mixture onto the toasted bread and garnish with fresh herbs.

Ingredients:
- 800g cream cheese
- 500ml heavy cream (33% fat)
- 210g powdered sugar
- 5 eggs
- 1 vanilla bean
- 14g lemon juice
- Zest of 1 lemon
- 40g flour
Instructions:
Ensure all ingredients are at room temperature. Mix everything gently by hand or with a spatula, avoiding beating. If there are lumps, strain the mixture. Line a baking dish with damp parchment paper. Pour in the cheese mixture and bake in a preheated oven at 480°F (250°C) for 35 minutes. Let it cool to room temperature and stabilize for 3-5 hours before serving.
