Beyond the Kulich: Three Unique Easter Baking Recipes from a Food Blogger

Easter is just around the corner, and it’s the perfect time to share some baking recipes that can be a great addition or even an alternative to the traditional kulich. These Easter recipes are brought to you by food blogger and chef Victoria Reutskaya. You still have time to prepare and purchase all the necessary ingredients without any rush.

Almond Muffins: Perfect Flavor in 25 Minutes

In these muffins, I wanted to combine the things I love the most and usually can’t choose between. And I often choose both chocolate and strawberries! And almonds… They fit in so well here!

Ingredients:

  • Almond flour (or any other nut flour) – 180 g
  • Powdered sugar – 130 g
  • All-purpose flour – 80 g
  • Butter – 115 g
  • Baking powder – 5 g
  • Egg whites – 150 g (I used 4 eggs)
  • A pinch of salt

For decoration:

  • A strawberry in each muffin
  • A bit of heat-stable chocolate (chips, sticks, drops – you can find them in confectionery stores)
  • Chopped almonds

Instructions:

  1. Combine all dry ingredients.
  2. Whisk the egg whites a bit, combine with the flour mixture, mix well, and add melted butter. Mix again until fully combined.
  3. Grease the muffin tins with butter, fill them 3/4 with batter, and place a strawberry in each, pressing slightly.
  4. Sprinkle with chocolate and chopped almonds.
  5. Bake at 180°C for about 25 minutes.

Poppy Seed Roll: Meditation with Taste

I’m sharing a universal Easter recipe for a roll. It can have any filling; in this case, I used poppy seed – one of my favorites. This dough rises easily, and despite being delicate, it’s easy and pleasant to work with.

Ingredients:

  • Warm milk – 250 ml
  • Yeast – 30 g fresh or 10 g dry
  • Egg – 1
  • A pinch of salt
  • Butter – 60 g
  • Sugar – 2 tbsp. (you can add more)
  • Flour – 500-550 g

For the filling:

  • Poppy seed mixture from a jar (you can use any, just adjust the sugar to taste)

Instructions:

  1. Add sugar and yeast to warm milk, let it sit for 15-20 minutes. This step is essential.
  2. Add melted butter, egg, salt, and flour in portions to the milk mixture. Do not add all the flour at once. You should get a soft and delicate dough.
  3. Form a ball and let it rise until it doubles in size.
  4. Roll out into a rectangular sheet, spread the filling, and roll into a tight roll.
  5. Place in a tin (or without) and bake until done, about 35 minutes at 180°C.
  6. Cool and serve, dusted with powdered sugar.

Oatmeal Banana Bread: Healthy and Delicious

It seems like everyone has baked banana bread except the lazy ones! But this is not just any banana bread; it’s oatmeal with blueberries and raspberries. And with a divine dough structure! And these are all Easter recipes for your holiday table.

Ingredients:

  • Room temperature butter – 125 g
  • Sugar – 100 g
  • Eggs – 2
  • Ripe bananas – 2
  • A handful of blueberries
  • A handful of raspberries
  • Flour – 180 g
  • Oatmeal – 100 g
  • Baking powder – 1 tsp.
  • A pinch of salt

Instructions:

  1. Mix soft butter with sugar and whisk until fluffy. Add eggs one at a time and continue whisking.
  2. Mash the bananas with a fork.
  3. Add flour, oatmeal, baking powder, and salt to the egg mixture. Mix and add the bananas. Mix well again (I used a spoon).
  4. Add blueberries and raspberries, gently transfer to a greased tin.
  5. Bake for 30 minutes at 180°C.
  6. Let the bread cool completely before slicing.
