1. Cherry Cottage Cheese Mousse
Preparing this tender and light dessert will take no more than half an hour. Keep in mind that it needs time to set, so prepare it in advance. You can make it in the evening so that a sweet and healthy breakfast awaits you in the morning.
Ingredients:
- 200 g of cottage cheese
- 150 g of cherries
- 4 tablespoons of sour cream or cream
- 1 packet of vanilla sugar
- 15 g of gelatin
- Powdered sugar to taste
Instructions:
Dissolve the gelatin in a small amount of water according to the instructions on the package. Beat the cottage cheese with a mixer and rub it through a sieve. Add sour cream, powdered sugar, and vanilla sugar to it. Wash the cherries, remove the pits, and cut them into 2-4 parts. Add the berries and dissolved gelatin to the cottage cheese mixture and mix well. Pour the resulting mousse into molds and refrigerate for one hour. Garnish the finished dessert with whole cherries.
2. Homemade Raspberry Candies
For these candies, you will need only three ingredients, the main one being fresh raspberries. A dietary dessert with an original taste and bright aroma, the preparation of which will take you no more than half an hour.
Ingredients:
- 550 g of raspberries
- Half a teaspoon of soda
- 20 g of gelatin
Instructions:
Wash the raspberries thoroughly and dry them using a colander. Puree the berries with a blender until smooth. Add gelatin, mix, and let it sit for 10 minutes. Put the mixture on low heat and stir until the gelatin dissolves, but do not bring to a boil. Cool the puree, then beat with a mixer for 5-6 minutes. Add soda and beat a little more. The mass should become airier and lighter.
Line a mold with plastic wrap, pour in the mixture, and refrigerate for 5-6 hours until completely set. Place the hardened mass on a board and cut into candies.
3. No-Bake Nut Cake
This is a very hearty dessert made from natural products that is prepared without heat treatment.
Ingredients:
- 1 cup of peeled almonds
- 1 cup of peeled walnuts
- 1 cup of pitted prunes
- 6 tablespoons of cashew paste with coconut
- 100 ml of coconut milk
- 1 banana
- 200 g of cream cheese
- Vanilla, salt, Jerusalem artichoke syrup to taste
Instructions:
Slice the banana into circles and puree it in a blender. Add cream cheese to it and beat again. Pour coconut milk into the mixture, add cashew paste, a little Jerusalem artichoke syrup, and beat again. The cream should be slightly sweet but not cloying.
Grind almonds, walnuts, and prunes in a blender with salt and vanilla. Lay the nuts in a thin layer on the bottom of the mold and spread the cream on top. Sprinkle another layer of nuts on top and pour the remaining cream. Decorate with crushed pistachios or fruits. Chill slightly and you can serve.

Instructions:
Mix cottage cheese, eggs, and cinnamon with ginger. To the resulting mass, add raisins pre-soaked in water, finely grated zest, and millet flakes. Mix well and refrigerate for 30 minutes. After laying out the cooled mass in molds and placing in an oven preheated to 200 degrees for half an hour. Serve with berry sauce.
5. Banana Ice Cream with Strawberries
There is no milk or sugar in this ice cream. The basis of the dessert is frozen bananas.
Ingredients:
- 4-5 ripe bananas
- 200 g of fresh strawberries
- 1 teaspoon of honey
- Nuts to taste
Instructions:
Peel the bananas, slice them, lay them in one layer, and place them in the freezer overnight. After freezing, beat the bananas in a blender into large crumbs. The berries – can be fresh or frozen – wash, chop, and add to the bananas. Beat until smooth. Add a teaspoon of honey, which will soften the acidity of the berries. Mix well and place in a suitable container. You can decorate with nuts and whole berries.
